A delightful summer salad with fresh seafood and a zippy citrus vinaigrette.
A staple on our appetizer menu and a popular favorite, this is an easy-to-prepare treat. Serve it with a little bit of mixed greens in a citrus vinaigrette for a great blend of flavors.
Because Chef Evan first made these lamb chops for his wife's baby shower, friends and family often request "Baby-Shower Lamb Chops." After they won a blue ribbon at the 2003 California State Fair Professional Chef Challenge, they were renamed "Blue-Ribbon Lamb Chops" and were featured at the Andiamo! Gold Medal Wine Dinner. A very hot grill, fresh herbs and roasted garlic are the key.
This is an amazingly moist and delicate seafood dish, with a great balance of mango sweetness and citrus tang. It is an elegant dish for a special occasion, although some of us would like to have it regularly.
Baked Prawns & Scallops with Seafood Stuffing
This dish is one of Chef Evan's favorites. It has beautiful color and great textures. It is ideal for a special early summer graduation celebration and can also be separated into an outstanding appetizer selection. The parmesan prawns can stand alone. The scallops served with Sambucca sauce are delicate hors d’oeuvres. The seafood stuffing is excellent formed into cakes and topped with the fruit relish.
Chef Evan has a following of loyal fans who believe this steak is the best steak they have ever eaten. The judges at the 2004 California State Fair agreed and awarded this dish a blue ribbon in the preliminary rounds of the California Kitchen Chef's Challenge. Try it and become a believer!
